On high heat, boil 8 cups of water in a large pot and then add washed beans,  cook for about 1 hr. Season chicken thigh and rub well with olive oil. Place in an air fryer basket lined with aluminum foil and cook at 370 degrees for 15 minutes,

Flip chicken and fry for 10 more minutes. 

 In another pot, on high heat, boil vegetable broth and add cauliflower rice and cook for 10 minutes. 

Using two forks shred chicken thighs and set aside. 

In a small blender, add cashews and spices with about one cup of the rice broth and blend till smooth. 

Add olive oil in a small pan and toss in corn and suya spice, sauté on medium heat for about 10 minutes. 

Warm up the taco shells in the air fryer at 400 degrees for 2 minutes and chop green onions, once done, assemble everything to your liking.


  • I usually cook black beans ahead of time and keep it in the fridge during the week, making it easier for meal planning.
  • You can add in other spices like garlic powder and paprika, switch out chicken for grilled tofu and even add other veggies like lettuce and avocado.
