Why should you brine your chicken legs? Well, it is because the salt penetrates into the dark meat which then denatures the proteins and loosens the muscle fibers to create gaps that become filled with water, the meat can now absorb and retain moisture.

To brine the chicken, you will bring water to a boil in a large pot then add salt and sugar. Stir until everything is dissolved. Once the liquid has cooled down, pour it over the  chicken legs in a large bowl. Set in the fridge overnight. 

Drain the liquid and pat dry with paper towels. Drizzle olive oil and sprinkle the spices over each leg and rub vigorously.Place back in the fridge, marinate for anywhere between 30 minutes to overnight, totally up to you! I had mine sitting in the fridge for 24 hours because I got busy with other things. 

Line the air fryer basket with aluminum foil. Add chicken to air fryer basket in a single layer, set at 360 degrees (F) for 20-25 minutes, flipping the chicken legs halfway through. Depending on how big your air fryer is, you might have to do this in batches. 

For dinner this day, I made curried brown rice to go with the chicken legs:

So while air frying your chicken legs, bring water to a boil, remember 2 cups of water for every cup of brown rice. I prefer cooking my brown rice (pasta, couscous,etc) in a frying pan but you can totally use a medium size saucepan! Lower the heat then simmer for about 30 minutes. Drizzle some olive oil and add spices and frozen spinach. Cook for about 10-15 more minutes. 

Plate as you like and enjoy!


Cooking your chicken in bulk at the beginning of the week makes it easier to just focus on everything else for dinner or lunch. For me, I make it so later I can eat it with noodles, rice, shred it for a quick salad or even to go in a spinach wrap, eat it paired with potato wedges. The possibilities are endless! 

To reheat simply set the air fryer to 400ºF, place chicken legs into the basket in a single layer. Reheat for 5 – 8 minutes.
